Ahi Tuna Tartare
Ingredients:
8 oz sushi grade ahi tuna, small dice
1/2 cup mango brunoise
1 Asian red chile (no seeds)
1 brunoise (no seeds)
1 tablespoon cilantro leaves, chiffonade
2 limes, juice of
kosher salt
fresh ground black pepper
Procedure:
Fold ingredients together. Spoon onto slices of jicama.
This also makes a nice first course if served in a chilled martini glass. Serves two. Pair with J. Brut.
